The Department of Salad. I was tickled by the name, imagining an office where salads were discussed with feverish devotion. She sometimes referred to the ‘salad lab’ where dishes were perfected.
There was only Emily, of course, but the image made me smile.The photographs of the dishes made me crave salad, too. Fruit and vegetables, so fresh you could barely confine them within a bowl, inspired emotions that were the opposite of what the pandemic engendered.
Salads are about life, colour, juiciness. Every newsletter brought new recipes and an interview with someone Emily thought could teach her (‘I was the disciple, not the master,’ she explains).
