Back to the BBQ this week with lamb cutlets and summer salad!I am always looking for something a little different to cook on the grill and this is a great recipe.It is easy to make and, importantly, can be made in advance and left marinating in the fridge until ready to use.I’ve married it up with a lovely colourful salad that contains a multitude of fruit and vegetables.
This, accompanied with the dressing is truly delicious.Serves 4 peopleIngredientsMustard glazed lamb cutlets■ 8 lamb cutlets■ 2tbsp mustard (Dijon or English)■ 3tbsp demerara sugar■ Salt and pepperSuper summer salad■ 8 lettuce leaves of your choice■ Large handful of baby spinach■ 250g tomatoes cut into quarters■ ¼ cucumber, halved lengthways, deseeded and sliced into small.
