She started it on a high when Michelin awarded her a fourth and fifth star in the space of a week – a second for her Paris restaurant, Marsan; a third for her London one. “Secretly that was my dream and my teams’ dream too,” she admits. “I haven’t had the opportunity to celebrate the third star with my team and I haven’t had the opportunity to live my third star.
