I’ve only been to Corfu once and fully expected, when we went out for Sunday lunch, to eat lamb. But this is what was on offer, the dish that is eaten by Corfiots on Sundays.

It tastes more complex than you might expect because of the spicing. You should also add a pinch of ground cloves, but I’m not fond of it, so I’ve left it out.

If you want the pasta to be coated in sauce you can remove the chicken, stir the drained pasta into 
the tomato sauce, then serve it with the chicken on top.
