The republic’s national cocktail was invented in 1915 by Ngiam Tong Boon, a bartender at the celebrated Raffles Hotel. The hotel’s Long Bar, which had its roots as a simple row of tables where plantation owners would meet every weekend, was the place to see and be seen.
