However, there is one quiet, underrated food that’s forcing its way into the mainstream, is wildly versatile and is the perfect ingredient for a wintery cake.

Packed with calcium, vitamin C and iron, the vegetable, often thought of as a fruit, is most commonly associated with a pub crumble but also pairs beautifully with pork and pistachios.

According to chef and author Max Le Manna, as the “earth begins to loosen” in February a range of new vegetables are at their best - including forced rhubarb.
