Jake Filson was tied into a 'miserable' corporate job at an international law firm in Manchester working 11-hour days with hourly targets.
The 33-year-old only studied law as he knew it would give him security, but his real passion was in the food and drink industry.
In the summer of 2019, Jake, from Hale, found a way out and quit his job. His friend needed a hand opening a plant-based restaurant in California, and, during his time there, he came across alcoholic kombucha.
This was the start of him brewing his own alcoholic fermented tea - providing a less sugary alternative to regular cocktails.
