A Scots food blogger has created some fun cupcakes inspired by Scotland's unofficial national animal, the Highland Cow, and they are absolutely adorable.
Lucy Wilson, who is known as the Glaswegian Foodie on Instagram is the genius behind the Heilan Coo cupcakes, originally made the incredible treats to take to a friend's house on Burns Night.Featuring delicious milk chocolate icing, pink and white fondant icing and fluffy cakes, the inventive cupcakes look and taste brilliant.Speaking about how they came about, Lucy explained: "One of my pals threw a Burns Night last night and I was racking my brain on what Scottish themed gift I should bring."I saw a picture on Pinterest of this lady’s highland cow birthday cake and I thought, yeah I could do that but just smaller, and also multiple times."Stating that they are simple to make, fun and will easily impress anyone who sees them, the keen Glasgow-based blogger added: "They took around 2.5 hours to make and let me tell you, the horns were the most fiddly bits, but overall it was worth it because look how they turned out!"Luckily, Lucy was also happy to reveal how to make them and has provided us with the excellent recipe.What you'll need:For the cupcakes200g unsalted butter200g caster sugar3 medium eggs1 tsp vanilla extract200g self-raising flour4 tbsp milkFor the icing100g milk chocolate200g unsalted butter400g icing sugar5 tbsp cocoa powder3 tbsp milkFor the nose & hornsPink fondant icingWhite fondant icingAdditionalCupcake casesCupcake trayPiping bag and star piping nozzleHow to make them: Preheat the oven to 180°C.
