Edith Eoyne and her partner Paul Davenport had been travelling behind the HGV when it toppled over at the Carrington interchange on Tuesday afternoon (18 May).
The anticlockwise exit slip road at junction 8 had to be closed for a number of hours after the incident, which happened shortly after 2.30pm.
As the couple pulled over, they watched three HGV drivers in front of them jump out of their cabs, and run over to help the driver of the overturned lorry.
