'Baldy's gravy takes two days to make - you don't get that with a £2 pie'

It’s a common trope that anyone living in Wigan is never too far away from a pie, but for one chef in the borough, he never imagined that he would one day be making the pastry-filled delights let alone winning awards for them.

Alex Melling, who runs Baldy’s Pies of Wigan, rose through the culinary ranks by working at restaurants and venues over the years across Spain and Australia, as well as more local spots like The Billinge Arms and The Boathouse in Appley Bridge.

In fact, just four years ago, Alex, from Standish, said his speciality as a chef would have been making a mixed-up fusion of British tapas.

Now, he’s renowned across the country for his pies.
