



Healthy cauliflower gnocchi for just £1 per portion and under 500 cals - recipe
After a long day of work, it's tempting to swing by your favourite takeaway, or chuck a frozen pizza in the oven. However, taking some time to make Miguel Barclay's recipe for homemade cauliflower gnocchi will be well worth your while - and your body will thank you for it too. Each portion will cost you just £1, making it a great option if you're trying to stick to a budget.
Here's how to make it... Cauliflower gnocchi Serves 2 Ingredients ½ cauliflower, broken into florets 2 tbsp plain flour, plus extra if needed 1 egg A few sage leaves Small handful of grated parmesan Oil (any) Salt and pepper Preheat your oven to 180°C/160°C fan/gas mark 4. Scatter the cauliflower florets on to a baking sheet, then drizzle with olive oil and season with salt and pepper.
Roast for 25 minutes until cooked through.
Transfer to a bowl, mash with a fork and mix in the flour and the egg. Very, very lightly knead the mixture on a worktop (don’t press too hard – keep it fluffy) and shape into a sausage shape. If the mixture is too dry, add a splash of water.
If it is too wet, add a sprinkle of flour. Chop the sausage into 2cm sections. Pan-fry the gnocchi in a splash of oil over a medium/high heat for a few minutes, adding the sage leaves to the pan so they crisp up slightly.
